When flavours of fresh Green Chutney marry this iconic papad, we get this amazing burst of flavour on a plate.
Its very light on the gut since moong daal is the lightest of all Daals.
Papad was consumed at the end of the meal by our forefathers to lower the Glycemic load of the meal thus keeping us full for a longer time.
Unfortunately today it's considered to be unhealthy because of the way its made commercially with cheaper ingredients. If eaten when prepared the right way, in the right quantity it has many nutritional benefits.
How LOW SALT?

Unlike commercial papads all our papads are made with Papad Khar or Sajji salt. Sajji was traditionally used to make papads by our ancestors. Today commercial papad manufacturers use cheap substitutes for Saji like Soda Bicarbonate which makes the Papad high in Sodium thus causing lifestyle diseases like Blood pressure and are bad for the stomach.

\nOur papads don't stick to the jaws like commercial papads do because they are made with premium ingredients and spices using artisanal techniques our ancestors had used. These are not mass-produced, factory-made papads. Ours are hand made, sun-dried which is evident from the fact that they may slightly vary in size.\n

Kashmiri Chilies, dry, whole are a vibrant spice used in many Indian dishes, especially for gravies, dry sabzis & kebabs. This vibrant red elixir is mildly pungent but not very spicy.

Just like Chai is synonymous with India, Chai masala is what makes the Chai Indian.

There is serious science behind Dadi Ma's Chai Masala. It makes the Tea, digestible. It undoes the side effects of drinking tea. The spices not only warm the body, they also counteract the any negative effects of Tea like bloating and acidity created by the caffeine in the tea leaves. Spices like Saunth or Ginger powder and saunf, Anise seeds are digestive aids. Elaichi or Cardamon & Laung or Cloves not only freshen the breath, it also adds depth of flavour. Cinnamon is full of anti-oxidants and makes the tea full-bodied.

This is an old family recipe of ours. Amma always added just a pinch of this Chai masala in her tea cup right at the end, so the spices dont lose the aroma.

Mango pickle or Aam ka achar is traditionally made by Grandma's all across India for centuries. We have make this with a North Indian Heirloom recipe using succulent Raw mango pieces which are hand cut, sun-dried and then pickled to perfection using a plethora of spices like Fennel-Saunf, kabuli Hing-Asafoetida, Fenugreek-Methi, Red chilli powder and cold pressed mustard oil.

This jar contains just the OIL ( no mango pieces). Add this to daals, curries, parantha, biryani. Make Acchari paneer in a jiffy by drizzling the Pickle oil on the paneer tikka or Make achaari Parantha by folding in this Pickle oil in the layers while rolling our the dough. Or spoon over a bowl of dahi to add zing to your meal.

Mango delight is chopped Ram kela, a variety of mango, with some chopped Ginger, Green chillies and a tad bit of sweetness with the traditional mango pickle spices and cold pressed oil. It yummmmmmmmmm.. It's tangy with the bite of chilli and sometimes crunch of ginger juliennes and a host of hand roasted and every so lightly hand pounded spices.
