\nOur first Omni Roast in the showcase series is a resounding sensation from Ratnagiri Estate. ‘Candied Mandarin’ embodies the pinnacle of coffee craftsmanship, having undergone a highly controlled 90-hour extended carbonic maceration washed process. Cherries, meticulously picked at a brix of 23, were subjected to de-pulping before being placed in stainless steel fermenters. These vessels were purged with carbon dioxide gas, nurturing a 90-hour fermentation process, aimed at extracting the utmost complexity of flavors. After this rigorous fermentation, the produce was cleansed with clear water and steeped for a full 24 hours. A patient drying procedure on raised beds extended over 27 days rounded off the process.

\nLa Pastora comes from CoopeTarrazú R.L – a cooperative founded in 1960 comprising 228 small coffee farmers. Their consistent quality has positioned them as the most popular coffee exporters in Costa Rica. Around 80% of farmers cultivate less than 4 hectares of land. The cooperative assists members with credit, technical services, fertilizers, and much more. The number of wet mills in Costa Rica is now 250 due to increased demand fueled by long-term commitment to quality from farmers. Over half of the crop is exported to the USA with Costa Rica attracting over 1 million tourists from there – Tarrazú being the primary region of interest. The traditional ox-cart is a national symbol in Costa Rica and hardworking oxen are in charge of loading up coffee cargo at the plantations.

Robusta coffee – Arabica’s sister in the shadows is considered inferior, rougher and undesirable. But Pranoy Thipaiah of Kerehaklu Estate is writing a refreshing new chapter in the grand tale of Fine Robusta coffee and we are proud exponents of it. We present to you this unique lot of Snakehead Naturals Robusta dedicated to Charles Bukowski.
\r\nIf the great modern poets could be compared to coffees, all of them would be specialty Arabicas, but good old Charles would stand out as a Fine Robusta. Perceived as too rugged, too bold and sometimes too mad, all it took was a single reading of a few of his raw verses to experience the phenomenal depth of the man. We invite you to experience our Fine Robusta masterpiece – conceptualized and brought to fruition by the passion, creativity and hard work of Pranoy Thipaiah – that will change your opinion of Robustas henceforth and widen your horizons of coffee understanding. Our light to medium filter roast reveals gentle spice notes of clove that diplomatically make way for hints of vanilla and a sweet pastry finish. Expect a full-bodied cup, silky texture throughout and a pleasant bitterness that lingers for just the right amount of time. Bukowski was judged, misunderstood, rejected and even hated. He didn’t seem to care and went about his poetry and craziness in absolute style. It didn’t take much time for his rebutters to turn into exalters. Kerehaklu’s daring Robusta lot holds its very own form of magic. Here’s your chance to experience it.
\r\nProcess: This lot is a carefully processed Robusta CxR varietal from the Doddagandhi Block of Kerehaklu Estate. The plants are intercropped with citrus below a canopy of fig trees. The Snakehead Natural Process was undertaken where the fruits were first harvested selectively on picking mats laid below the bushes and a ripe-only approach. These were then brought back, rinsed thoroughly with the floats removed. Following this, the Robusta fruit were fermented as whole-fruit but underwater and in barrels – with parameters regularly checked. These were then dried on raised beds with regular raking and sorting. The process involved anoxic fermentation for 17.5 hours and the drying period was for 10 days.

Attikan or the ‘White Hill’ is eternally soaked with mist giving the coffee a unique taste profile. The farm is situated at the highest altitude where coffee is cultivated in South India . \nProcess: Only the sweetest cherries – with a brix level above 18 – are selectively handpicked in the honey process. The cherries are then sorted to eliminate fruit that have not completely ripened yet. The fruit are then pulped without using water. Pulping is done such that some of the mucilage is still left over the inner parchment. The first stage of drying involves drying in open sunlight for 3 days. \nCenturies ago, when ships sailed around the Cape of Good Hope taking almost 6 months to reach Europe from the Malabar Coast of India, a strange but fascinating effect took place on the coffee that occupied these ships. Due to the moist sea winds blowing over these ships, the coffee lost its original color and acquired a special earthy and mellow flavor that was cherished by consumers in Europe. The beans swelled and took on an entirely different, pale-yellowish appearance that distinguish them from regular ones. Today, this process has been commercialized and is exclusively carried out in the coastal town of Mangalore in the South of India. In the Monsooning process, whole crops of coffee cherries are selected and dried in expansive barbecues. The dried beans are then cured and sorted into grades – AAA, AA and A – following which they are stored in warehouses until the monsoon season. During the monsoon, these beans – stored in large ventilated warehouses – are exposed to the moisture-laden monsoon winds that blow over the western coast of India. The beans absorb the moisture and salts from these winds and get significantly larger taking on a pale-yellowish or golden color. The final result is a coffee that has pleasantly earthy flavor with very mellow acidity.

\nParama is a versatile coffee (a blend of arabica -92%, and robusta - 8%) with peaberry beans of both variants. The small amount of Robusta makes this a perfectly balanced coffee and also makes it perfect for espresso brewing. Parama is great with milk, but is also nice as a black coffee that's slightly on the deeper side. Parama is a medium roast coffee.

Over the last 3 years, we have received some delicious excellent coffees from the wonderful people at Balanoor Plantations. They have been producing some of the finest speciality coffee in the country for a number of years, and they have undoubtedly given us some of our favourite washed coffees. The Kents variety is found widely in Indian coffee, and the work that the team at Balanoor puts in really makes this delightful coffee. This is the third year we've had this coffee, and somehow despite all the challenges, it just keeps getting better!
\nThis medium roast has notes of rich milk chocolate, a subtle citrus acidity, and plum. This coffee is truly a delight, and is delicious black or with milk as a filter or an espresso! Yup, you heard it right: a coffee can be anything you want it to be!

The much loved Moganad Estate, and the hidden gem, the gorgeous Hidden Falls Estate. We have had these two coffees for a while and they've both been much loved by us and everyone had the pleasure of getting to know them better! One fine winter evening, while we sat beside these two coffees, listening to some vintage Rock n' Roll, we wondered what it would be like to get the clean crispness of the washed Moganad and the Juicy fruitiness of the Naturals Hidden Falls! So, with little better to do, we did it, we blended these two yummy coffees, and god we tasted berries for days on end! And was it merely fate, or a coincidence that while we sat dizzy consuming this blend, the Godfather of groovy, funky Rock n' Roll Chuck Berry was playing in the background? We think not! This super cool, funky, innovative blend is Jam-packed with flavor, brightness, acidity, a lingering aftertaste that'll have Beethoven Rolling Over!

Ro-Busta Rhymes is a super-duper tasty blend that really brings the best out both species of the coffees, but what’s really interesting is that acidity and the sweetness in this blend come a great deal from the Robusta! We recommend you try this blend black just to really get a feel of what the robusta brings to it!

Satchmo is the epitome of balance, with a voice that can go from deep, rich gravel to almost fragile falsettos. “Satchmo” the blend, just like its muse, has pitch-perfect sweetness, a deep body that swells like a crescendo, and a subtle “Vibratoesque” citrus acidity. A coffee that goes not toe to toe, but “Cheek to Cheek” with all accompaniments. 1. Grind coffee coarser than normal
2. Use 7 g of ground coffee per 100ml of water (in this case 25g for 350ml)
3. Heat water to approx 94°C
4. Pour water over the ground coffee
5. Replace lid and let brew for approx 4 minutes
6. No need to stir, push the lid down slowly
7. Serve your coffee
