The concept of 'dried mangos' originated from the practical need to preserve abundant mangoes for consumption beyond their peak season. The mangoes are hand-picked and specially chosen for the purpose, not too sweet-not too sour, then cut into the desired shape and left to dry out in the sun. By drying the mangoes in the sun, excess moisture is removed, which concentrates the fruit's natural sugars and flavors.

The practice of drying mangoes let to various culinary innovations over time and today aamshi is used particularly to make aachar, as mango powder (aamchur) and for sweets.
