Use this spice mix to make tandoori chicken at home—either on a barbeque grill or in an oven. It can be made with whole chicken, quartered, or with drumsticks/wings. At home, most people normally put this spice mix together using ground powders they already have on their shelves, such as red chilli powder, kashmiri red chilli powder or cumin powder. At amar khamar, we start with all whole spices—whole dried red chillies, whole large red chillies chillies, whole cumin seeds, cardamom pods, and so on—and grind them fresh for you, in small batches.

That makes this spice mix extremely favourful and super potent. For every kilo of chicken, you need about 15 grams (or half a packet) of our tandoori moshla.

Tandoori Chicken

INGREDIENTS

For marination

1 kg chicken (whole, quartered or wings)
\n15 g Tandoori Moshla\n
15 g salt
3 g black salt
10 g lime juice
100 g hung yoghurt
15 g ginger paste
7 g garlic paste
\n10 g chhatu (roasted Bengal gram; optional)\n
30 g mustard oil

Miscellaneous

melted butter
chaat moshla
\na piece of charcoal (for infusing smoke; optional)\n

METHOD

Marinate the chicken with all the listed ingredients.
\nDhungar (optional)—If you are planning to barbeque the kababs, skip this step. If you are cooking them in the oven, you could perform a dhungar, which is a method that infuses a smoky flavour to the kababs in the absence of a tandoor/barbeque. To do this, burn a piece of charcoal over direct flame for about 5–7 minutes. Set a small metal bowl (or a DIY bowl fashioned from aluminium foil) in the middle of the marinated chicken pieces. When the charcoal is hot and ashy, use tongs to place it inside the little metal bowl, and pour the ghee on it. You will see thick white smoke emerge from the charcoal. Immediately cover the bowl with a heavy plate or aluminium foil to trap that smoke in. Wait for 5 minutes to allow the smokiness flavour to infuse the chicken, then discard the charcoal.\n
Set the chicken in the fridge to marinate overnight (24 hours is best!)
Preheat your oven to 250°C or the highest temperature it will go. Grease the oven grill.
Skewer the kababs and place them in the hot oven. If you do not have skewers you can place them directly on the greased grill.
\nCook for about 6 minutes per side (in case of wings), or about 8 minutes per side (in case of quartered chicken). Note: Cooking time will vary based on the size of your chicken and temperature of your oven.\n
When done, remove from the oven and bursh on melted butter. Sprinkle chaat moshla. Serve immediately.

how do you make good biryani?

It is a combination of quality ingredients—meat, rice, spices, and aromatics—skill, and above everything else, experience. Making a biryani is like building a monument. Just as you would raise a building, brick by brick, down from its foundation, so it is when making biryani. This is how YouTuber and Kolkata biryani–expert, Salma The Chef, describes the process.

One of the key pillars of the Kolkata biryani is the biryani moshla. Most of us know what spices go in a Kolkata biryani. However, it is the proportion in which these spices are mixed that produces the perfect biryani flavour. Salma has spent years tinkering with these ratios. She obsesses over the quality and freshness of the spices. She looks for the exact roast level of each individual spice, some she uses in both their roasted and unroasted forms.

That is why Salma’s Kolkata biryani spice mix is actually two spice mixes—BIRYANI MOSHLA 1 & BIRYANI MOSHLA 2. When you add these two biryani spice mixes in the different stages while making biryani, you get the unique, well-rounded Kolkata biryani flavour.

freshness: These spice mixes are made by hand in small batches, and the date of grinding of the spice is printed on the packets. You will always know how fresh your biryani moshla is.

purity: Commercial spice mixes often use filler ingredients to save cost. It is not uncommon to see cardamom skins instead of whole cardamom, cinnamon leaves instead of bark cinnamon, and use of lower grade spices since they are going to be ground anyway. These biryani spice mixes are made using the exact recipe as the one available for free on Bong Eats’ Youtube channel, just like you would make them at home if you were following the recipe. There are no filler ingredients. No compromises are made on the quality of the spices.

care: Genuine care goes into the making of these spice mixes. For example, not all spices in the biryani spice mix need to be roasted to the same degree. So, the team at Amar Khamar roasts them separately from one another to get the perfect flavour. This is something that would be laborious to do at home for small quantities.

The roasted spices are then ground together, and passed through a fine sieve. What is left in the sieve is hand-ground on a stone sheel nora and strained again. Why? Because running the electric blender longer would produce a lot of heat and roast the spices more than they need to be. This process produces a flavour that can only be matched by the most fastidious home-cook.

When using this biryani moshla, you don’t need a lot of it. For a biryani with 1 kg of rice and 2 kg of meat, you only need 8 grams (roughly 3 teaspoons’ worth) from each of the two packets. Remember to follow our recipe at least the first time you use these spice mixes.

We have made a chhenar polao with Rani Kajal, an aromatic rice variety from the Sundarbans lowlands. The slightly buttery popcorn flavour of the rice compliments the milkiness of the entire dish, which we adapted from Prajna Sundari Devi’s cookbook.

The rice with an intriguing name, Rani Kajal is an aromatic variety from the low-lands and is among the type of flood-tolerant rice that grows taller and taller in tandem with rising water levels. This characteristic underwater “stem elongation” property is governed by the genes, SNORKEL 1 and SNORKEL 2, located on chromosome 12. Hence, it can elongate their stems as floodwaters rise, keeping their seed-bearing panicles above water up to four metres deep. It is also resistant to bacterial blight. Rani Kajal was also one of the particular rice varieties that ensured rice production for southern Bengal farmers after a flash flood of the Hugli River in 1999.

The concept of 'dried mangos' originated from the practical need to preserve abundant mangoes for consumption beyond their peak season. The mangoes are hand-picked and specially chosen for the purpose, not too sweet-not too sour, then cut into the desired shape and left to dry out in the sun. By drying the mangoes in the sun, excess moisture is removed, which concentrates the fruit's natural sugars and flavors.

The practice of drying mangoes let to various culinary innovations over time and today aamshi is used particularly to make aachar, as mango powder (aamchur) and for sweets.

what you can do with it

Traditional wisdom says that aamshi can be used in anything that you will normally do with in-season mangoes. Just hydrate them in some warm water. Chop them up in a chutney, add them to a fish curry, or a flavorful broth to cook any of our rice varieties in. It is a key ingredient in many dishes adding a unique tangy flavor. You can also simply it is as a healthy, portable snack that is packed with vitamin A and C, fiber and antioxidants. The possibilities are endless.

Made from delicious mangos from Malda, our aam moshla is renowned not only for its rich, tangy flavors but also for its traditional preparation methods that have been passed down over generations.

To prepare our aam moshla, our craftsmen are cutting and sun-drying the mangoes with salt and turmeric. After some time, panch phoron is dry roasted and ground to a coarse powder with shilpatta (stone mortar and pestle). This ensures that the spices retain their natural oils and aromatic qualities. Dried red chillies and garlic are then ground into a coarse paste. All ingredients are mixed with mustard oil, which helps in binding the spices and enhances the shelf life. It also adds a rich, robust flavor, balancing the heat from the chillies and the earthiness of the other spices. We age the aachar for a few weeks, during which time the spices fully infuse the mango pieces, creating a tangy, spicy and aromatic flavor profile. Now it is ready to enjoy.
