Made with chopped Banarsi Lal Mirch & Garlic, this chutney adds tangy, spicy, chatpata flavors to your everyday thali. \nThe chutney preparation’s first step is sourcing the right quality of Lal Mirch, which arrives at our kitchen factory from Banaras. We check every lal mirch to check if they meet the quality standards to make into chutney. Chilis with dark spots or over-aged are discarded.
\n
After sorting, the chili is washed, dried in the sun, the tail removed, and chopped into small pieces. The chutney has 50% chopped red chilis, 35% peeled & chopped garlic, and 15% chopped ginger.
Alongside the red chili preparation, garlic & ginger are also peeled, cleaned, and chopped.
We prepare this chutney in small batches of 30 kgs. The 3 main ingredients are mixed together in proportion, to prepare the base of the chutney before the spices and mustard oil is mixed. Salt and Turmeric are added to the mixture of chopped lal mirch, garlic, and ginger to be left overnight for marination.
We source our mustard oil from Rajasthan and get it tested for safety and purity at accredited laboratories.
Our spices come from small farmers across Darbhanga, and Samastipur masala markets. They buy whole spices, and thereafter sort, clean, roast, and ground them in-house before pickling.
Once the spices are ready, and the pickle base with Lal Mirch, Lahsun, and Adrak has been left overnight mixed with salt + turmeric - it’s time to prepare the pickle.
The spices and mustard oil are added to the mix. And stir till everything blends together and is ready to be put out in the sun.
The pickle is prepared in Jan-Feb time and requires only 7-10 days of sunlight. Additionally, it’s stored and aged in glass martabans for 1-3 months before being shipped.

When the Amla arrives, it’s first sorted for clean, spotless fruits that qualify for pickling. It’s washed and steamed for a short while, so it becomes easy to remove the seed and grate the fruit in a grinder.

Once the amla has been steamed, and grated to almost paste-like, it’s mixed with sugar to be left overnight.
After 24 hours or so pass by, the fruit and the sugar mix are ready for the final cooking.
We prepare this pickle in small batches, over low-medium flame. First, this mix is taken into the cooking vessel and given some heat while being continuously stirred. Spices are added, and the mix is stirred over low flame till it develops a dark green, brownish color.
We use a small amount of fruit vinegar, which is added once the pickle is near completion over a flame. This vinegar acts as a preservative.

The khatta-meetha amla pickle is prepared in Jan-March time and doesn’t require sunlight. Additionally, it’s stored and aged in glass martabans for 1-3 months before being shipped.

We source the karonda from the border areas of Bihar & Bengal. Till a couple of decades ago, you could find karonda trees in people’s backyards. And everyone loved eating the fruit raw, and pickling it.
\nBut, these days most of the Karonda available comes from outside of Darbhanga. Karonda fruit is red, white & greenish in colour.
\nThe pickle is green in colour as the spices, specially the turmeric, gives the pickle its colour.
\nTo begin the pickling, the 3 main ingredients are cleaned, washed, and left out in the sun for a couple of hours.
Karonda is cut into two pieces. Ginger is (almost) grated to make think inch long fingers. And the green chili is cut into 2-4 pieces.
Turmeric & Salt is added to the mixing vessel with the 3 main ingredients in equal quantities.
Overnight, the mixture gets well marinated, and is ready for the next step. Spices & Mustard Oil is added to complete the pickling process.
As the final step, the pickle is now kept in the sun for 7-10 days. The masalas mix blend together and the fruits soften during this time under the sun.

The seeds, that are taken out, are mixed into the spices along with mustard oil. These seeds add a unique flavour and texture to the spice mix.
Eventually, the red chilies are stuffed with the masala mix one-at-a-time. It’s a very delicate process and the red chilies must retain their shape and form once the filling is complete.
The red chilies are then arranged over a butter paper in a सूप (traditional Bihari kitchen utility made with bamboo) for sun-drying. It takes about 7-10 days of sun for the pickle to be ready.

A traditional Bihari preparation, this pickle is made with white bitter gourd grown locally.. Bite into the crunchy finger like pieces, wrapped with a tangy, chatpata masala – blended together in raw mango juice and mustard oil.

\nThe pickling starts with selecting the right type of Karela.
Here locally a white variety of bitter gourd is grown, specially for pickling. It has fewer seeds as well. We make sure the fruit used is freshly plucked.
\n
Once the bitter gourd arrives to our kitchen factory, it washed and cleaned, and left in the sun to dry for a couple of hours.
It is then cut into 2 inches long finger like shapes. In case after cutting the karela, all the seeds are red in colour, that karela is rejected as it has become too mature for pickling.
We remove all the seeds, and again the cut pieces are spread out in the sun so that the moisture within gets removed.
\n\nThe marination of this pickle is different and is done in raw mango’s juice, together with salt and turmeric. This marinated cut karela is left untouched for 12 hours.
After this time has passed, the ground and roasted masalas are added to the pickle along with mustard oil.
It is a relatively easier pickle to sun-dry and takes about 10 days to get ready in good sun-light.
We enjoy this pickle most with aaloo parantha and dahi 😊

\nThe process of preparation begins with the raw amras arriving to our kitchen factory.
We separate out the most mature amras because their pulp and seeds are too tight. Therefore, it’s important to buy the fruit at the right stage in its life.
Because amra is rare, tangy, wild fruit that itself is loved across these parts – the pickling of this pickle is rather simple. You’ll often see people sitting on their terraces and enjoying this fruit with black salt on rainy afternoons in this part of the country.
Once the amra’s arrive, they are cleaned with a couple of rounds of water. And left outside to dry for a couple of hours.
The fruit, which is similar is size to a strawberry, is cut into two parts. They are put together in a mixing vessel and the marinating spices – salt & turmeric – are added. This mix is left untouched for 12 hours so that the extra moisture within the amra comes out.

Finally, we add the masalas to this marinated amras and the pickle is ready for sun-drying.
\nThis fruit is a delicate fruit, and is prepared easily under the sun within 7-10 days of good sunlight.
\nEven in Mithila, it’s very difficult to get this fruit. As it mostly grows in the wild. And hence the pickle is cherished a slightly more 😉

Mango varieties used for production of this pickle includes Malda, Bijju, Kalkatiya & Sukul. They are all tangy, juicy, pulpy varieties grown in Darbhanga district. Spices are mostly sourced locally from farmers, and bazar samitis in Samastipur. We buy whole spices and clean, roast, ground them in our kitchen-factory. Mustard Oil is brought in from Rajasthan. We test it regularly for purity, and quality.
\nThe Process of Preparation is inspired by the traditional techniques Kalpana observed her mother-in-law Tarini use to prepare this dry mango pickle.
Typically, the mangoes for this pickle arrive in the evening around 7 PM, after being plucked from the trees on the same day. Immediately they are sorted in size categories. The small mangoes are not used for this pickle. Selected mangoes should be big enough to cut out 4-6 large pieces (2 inches * 1 inch).
The next morning, work begins by cutting the mangoes. As soon as a mango is cut, it’s dipped into water to take away the heat inside the mango. After 5-10 minutes pass, the cut mangoes are washed again 2-3 times before being spread under the sun for a couple of hours to dry out the moisture.
After a few hours, turmeric and salt is added to the cut mango pieces. And this mixture is left untouched for 12-48 hours. The moisture within the mangoes drains out in form of tangy juice which is separated. At the same time, a masala mix is prepared by adding together about a dozen different spices, and mustard oil. Everything is mixed well, till the masala blends together. The proportion of spices used is based on Kalpana’s experience. Tangy water that drained out of the mangoes is also mixed into the masala.
\nAfter the time has passed, the cut mangoes are taken out and the masala is wrapped around the inner side one piece at a time. It’s a tedious process, and takes time. Finally, this cut piece of mango with masala wrapped around it is dipped into oil, and spread out on top of a bamboo soop as seen below. This pickle is now ready for sun-drying for 6-10 days. Once through the sun-drying phase, it’s stored in glass martabaans before being send to our customers.
\n\nThis pickle is slightly saltier than the other ones on our store, as salt and turmeric act as the chief preservatives and not oil. When you go to villages in Darbhanga, Madhubani, or any nearby areas, you’re likely to be welcomed with Chora Dahi & this sookha bharua pickle. More so, during or just after monsoon.

\nOur mixed pickle recipe is inspired from the traditional Indian recipe handed to us over generations.
\nThe pickling process begins with separted the garlic Buds . Then, the buds are peeled, and sun dried for a couple of days.
\nGreen Chillies are washed, and cut in small pieces, and kept in the sun along with an equal quantity of peeled Ginger. All three ingredients are kept in the sun so that the moisture disappears.
\nNext, fresh lemon juice is squeezed. Lemons are cleaned, kept in the sun, cut into small pieces, and the juice is taken out.
\nThen, Garlic, Ginger, Chilli is mixed with Salt, Lemon Juice and Turmeric - and kept in the sun for a day.
\nFinally, spices are mixed, roasted and ground before being mixed into the pickle. After 3 more days outside in the sun, the pickle is stored in traditional utensils, called martabaan.

\nThe first key step is selecting the right variety of ingredients for the pickle, specially the three vegetables, Oal, Ginger and Green Chilies.
\nWe use Desi Oal varieties grown locally in Darbhanga. Oal, or Suran, or Jimikand, or elephant yam – grows below the soil. Even after harvesting Oal can be stored in your aagan, or bagicha for weeks.
\n\nIt’s important to select the ginger that have thin skin. Otherwise, it takes too long for the ginger to soften up. And it overpowers the other flavours in the pickle. While choosing the green chili we make sure it’s a variety with less seeds inside. Mostly, we make this pickle using bullet/longia mirchi varieties as they are hot, with thin skin, and have few if any seeds.
\nJuice from the local jamiri lemons also is an essential ingredient in this pickle. Jamiri Lemons have a very distinct aroma, and has always been preferred over other varieties for adding tanginess in the pickle.
\n\n
The spices are sourced locally from the Samastipur Mandi about 40 Kms from our kitchen-factory. Sorting, Cleaning, Roasting, and Grounding of spices is carried out in-house. Roasting & Grounding is done for most spices to enhance their flavours, aroma, and the texture of the pickle once ready.
\nWe follow the local processes of pickling passed onto Kalpana and Uma through their mothers, and mothers-in-law. All begins by cleaning the Oal, Ginger, and Green Chili in water, for 2-3 rounds. The tail of the green chili is removed.
Once thoroughly washed, they are left in the sun for a couple of hours. And then chopped into smaller pieces for grating. Traditionally, this pickle has been prepared by mixing all these 3 ingredients in equal quantities. That’s why the name Oal Barabar is also used to address this pickle here in Darbhanga and nearby. Note that there are no pieces of any of these 3 ingredients as they are all grated, कद्दूकश करे हुए तीनो ही।
We make 30 Kg batches at a time, by mixing equal quantities of कद्दूकश करे हुए oal, ginger, and green chili.
Once the three ingredients are added in the pickling vessel, salt, turmeric and lemon juice is added to marinate the mixture. It’s left untouched for 12-24 hours, as the moisture in the ingredients is drained and settles around it in the mixing vessel. Note that this moisture is extremely important for the final flavour and is not separated out.
After 24 hours, oil and spices are added as per the batch size in appropriate proportions.
And the mixture is ready for sun-drying to run into the final pickle. Oal pickle takes about 10 days of sun-light for the spices to mix well. Once ready, it’s stored in glass martabans to be used when customers order.
We make this pickle mostly in the period October-December. This is the time of year when all the main ingredients are harvested and are available in abundance.
